    Layer yogurt with apple-cinnamon wheat germ in small parfait dishes, and refrigerate overnight …..

    Get a good granola cereal, and use fruit yogurt instead of milk with it……

    melon wrapped with prosciutto …. quesadillas with wheat tortillas ….

    We have cereal primarily every week day, topped with fresh fruit, either healthy oat bran or whole wheat varieties or occassionally a hot oat meal, cream of wheat or grits. On the weekends, we have our eggs, bacon & toast, waffles or pancakes. Avoid fatty sausages and bacon should be crispy and well drained. Canadian Bacon or lean ham is another good choice.

    Farmer’s Casserole
    Layer ingredients in a baking dish the night before, then cover and refrigerate. In the morning pop the casserole into the oven about an hour before serving. Makes 6 servings
    Ingredients

    2 1/2 cups frozen shredded hash brown potatoes, or Tater Tots
    3/4 cups shredded Monterey Jack with (optional) jalapeno peppers
    1 pkg. Knorr’s Leek Soup mix
    1 cup chopped fully cooked ham or Canadian bacon (optional)
    1/4 cup sliced green onion
    4 beaten eggs or 1 cup egg substitute
    1 – 12 oz. can evaporated milk (or 1 ½ cup evaporated skim milk)
    1/4 tsp. pepper
    1/8 tsp. salt
    1/2 lb. asparagus or mushrooms, washed and cut into 1″ pieces
    4 to 5 tomatoes, coarsely chopped

    Spray a 2-quart square baking dish with Pam. Arrange potatoes evenly in the bottom of the dish. Sprinkle cheese, ham, green onion over all. In a mixing bowl combine eggs, milk, pepper, salt, soup mix. Pour over mixture in baking dish. Sprinkle with Crazy Jane’s salt and/or Mrs. Dash. Cover with foil or plastic wrap and refrigerate overnight. ext morning bake uncovered at 350 for 1/2 hour. Remove from oven; add asparagus or mushrooms and tomatoes. Bake for another ½ hour until golden brown. Let stand 5 minutes before serving.

    Italian Breakfast Casserole
    1 lb. Italian pork sausage
    10 eggs, lightly beaten
    3 c. milk
    2 tsp. dry oregano
    1 tsp. salt
    6 c. cubed bread
    2 c. (8 oz.) shredded Italian cheese blend
    1/2 tsp. black pepper
    1/2 c. thin-sliced green onions

    Preheat oven to 325 degrees. In large skillet, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink; drain and set aside. In large mixing bowl, combine eggs, milk, oregano and salt; stir well. Distribute half of the bread cubes evenly in a buttered 9 x 13 x 2-inch baking dish. Sprinkle with half the pepper, half the cheese, half the sausage and half the onions. Repeat layering using remaining bread, pepper, cheese, sausage and onions. Pour egg mixture evenly over casserole. Bake uncovered for 60 minutes or until eggs are set. Tent with foil if top begins to brown too quickly.
    Note: Casserole may be assembled ahead and refrigerated up to 12 hours before baking.

    Brunch Eggs and Canadian Bacon
    12 slices Canadian bacon — sliced thin
    1 1/2 cups Swiss cheese — grated
    12 eggs
    1 cup whipping cream
    1/2 cup parmesan cheese
    Salt
    Pepper
    Paprika
    Parsley

    Lightly grease a 13 x 9 pan. Layer the bacon on the bottom of the pan, followed by the Swiss cheese. Break the eggs over the Swiss cheese, being careful not to break the yolks. Pour the cream over the eggs. Bake @ 450 for 10 minutes. Remove from the oven and sprinkle with the Parmesan cheese. Sprinkle with the desired amount of salt and pepper and paprika. Bake for another 8-10 minutes. Let stand for 5 – 10 minutes before serving and sprinkle with parsley.

    Egg bake

    1 pkg frozen hashbrowns
    8 lrg eggs
    1/2 cup milk
    1/2 cup sliced cherry tomatoes
    green onions chopped

    Preheat oven to 400
    Add hasbrowns to bottom on baking dish cook for 20-25 min once done let cool for 5 minutes
    Beat eggs, milk and chopped green onions together and pour over hashbrowns
    add tomatoes on top
    Bake about 25-30 minutes until eggs are cooked

    also make a breakfast wrap

    Scambled eggs
    Whole wheat wraps
    crumbled bacon
    shredded cheddar
    tomatoes

    I love allrecipes.com I get all my recipes from that site. I only cook the things with 5 stars. English muffins with cheese and ham. Fruit is an easy breakfast. I drink Slimfast shakes for breakfast on the go. The French Vanilla flavor is SO good. They aren’t super healthy, but they are so yummy.

    I buy plain yogurt and frozen fruit and put about 1 cup of yogurt and half cup of frozen fruit in a cup and top with about a half packet of equal.

    I also bought whole wheat cherrios. They are lightly sweetened but are whole wheat and they are great!
